Our HQ is perched on the border between Sussex and Kent, the ‘Garden Of England’, fantastically placed to enjoy the huge variety of produce from the hundreds of smallholdings and farms surrounding us. We also trial heritage and heirloom varieties of vegetables, herbs and fruits in our own kitchen garden.

England’s nourishing soil and temperate climate gives us such an abundance of year-round produce we rarely need to source from elsewhere. From the produce on our doorstep we can create flavour packed menus using the bright, fresh flavours of spring and summer to the robust, earthy tones of autumn and winter.

The closer you look at ‘traditional’ English food the more you’ll find it also bears the strong influence of our interactions with other cultures across the centuries. We have a knack, it seems, for bringing back exotic flavours from the four corners of the globe and making them as British as beef and beer.

Think of our Anglo-Indian relationship, for example, which has given us our love of balancing sweet and sour, plain and pique. Its enduring legacy is the reason we pair mint sauce with lamb, horseradish with beef and piccalilli with ham.

This readiness to absorb and adapt new flavours and our uniquely adventurous approach to taste is a constant source of inspiration to us. Reviving traditional cooking and preserving methods whilst celebrating the rich history of our nation’s love affair with flavour is our passion.
